Prawn Noodle Condiments
- 100 gram Lettuce
- 3 KG Prawn Noodle Stock
- 30 gram Fried Pork Lard
- 10 gram Spring Onion (Slice)
- 1 pkt Healthy Noodle (Blanched for 15 sec)
- 30 gram Fried Shallot
- 300 gram Blanched Beansprout
- 140 gram Blanched Fish Cake (2 pcs)
- 300 gram Blanched Kang Kong
- 150 gram Blanched Minced Pork (Plain)
- 300 gram Blanched Prawn (1 pcs cut into half)
Preparation
Prawn Noodle Stock
750 gram Prawn Shell
> Baked 180C for 15 mins
68 gram Garlic (With skin on)
75 gram Ginger (With skin on)
> Heat up pan with oil & char the garlic & ginger till golden brown
4.5 KG Water
62 gram Rock Sugar
90 gram Light Soya Sauce (Lee Kum Kee)
Stock Seasoning
> Bring water to boil,add all the ingredients in & boil for 15 mins
> Strain the Stock & Pour the stock into another pot
> Taste & ready to serve
